Hen Broth

Hen broth is part of the traditional street food of CDMX, as every Mexican has their favorite stand. Although its smell is very strong, once you try it, you become fond of its flavor. Prepare this hen broth recipe at home and give a different touch to your weekly menu.

  • water
  • 1 hen, clean, without organs, cut into 4
  • 1 onion, cut in half
  • 1 head garlic, to the middle
  • 1/2 leeks, in cubes, only the white part
  • 2 sprigs celery, chopped
  • 1 cup chickpeas, soaked the night before, drained
  • 5 leaves bay, dry or fresh
  • 2 sprigs fresh thyme
  • 1 tablespoon oregano, add once it boils
  • salt

  • rice, cooked, for garnish
  • onion, finely chopped, for garnish
  • cilantro, finely chopped, for garnish
  • chile flakes, for garnish
  • lime, in thirds, for garnish

  • Fill a pressure cooker with water to cover a little more than half of its capacity and add the cleaned hen pieces, onion, garlic, leek, celery, soaked and drained chickpeas, bay leaves, and thyme. Close the pot, place the valve, and cook over medium-high heat. Once the pot starts making noise, lower the flame a bit and cook for 45 minutes.
  • After the cooking time is up, turn off the heat, let the steam escape through the valve, let it cool, and open. Return the pot to the heat, add oregano, season with salt and pepper, and cook for another 10 minutes.
  • Serve the cooked rice on a plate, then add a piece of cooked hen, broth with chickpeas, and garnish with onion, cilantro, chili flakes, and lime to taste.
