Puchero Recipe

  • 4 liters water
  • 1 onion, cut in half
  • 6 cloves garlic
  • 2 kilos beef shank
  • 2 kilos bone marrow, cut
  • 1/4 cups fresh cilantro
  • salt
  • 2 ears corn, cut into three parts
  • 1 potato, cut into cubes
  • 2 carrots, sliced
  • 2 chayotes, cut into cubes
  • 1 cup green beans, clean
  • 2 zucchinis, sliced
  • 1/4 cups spearmint
  • 1 serrano chile, sliced

  • Heat a large pot over medium heat with water, add the onion, garlic, beef shank, marrow, cilantro, salt, and cook for 1 hour or until the meat is almost cooked.
  • Add the vegetables in the indicated order: first the corn, then the potato, the carrot, the chayote, the green beans, cook for 10 minutes, then add the zucchini, the mint, and cook until the vegetables are done. Serve with slices of serrano chili. Enjoy with warm tortillas.
