3/4 kilos shrimp
2 tablespoons vegetable oil
6 árbol chiles
3 canned chicken broth, 15.75-ounce cans
10 slices ginger, fresh peeled and crushed
2 1/2 teaspoons lime zest
4 serrano chiles, chopped, peeled, and seeded
1 sprig fresh cilantro
1 sprig lemon cane, lemongrass, peeled and chopped
2 shallots, peeled and halved
3 tablespoons fish sauce, tai
3 tablespoons lime juice
1/2 cups fresh cilantro

Peel the shrimp, reserving 6 shells and place on a plate.
Add the oil to a large pot over medium-high heat.
Add the dried chiles and shrimp shells, frying them for 3 minutes until the chiles are dark.
Add the chicken broth and wait for it to boil. Add the ginger, serrano chiles, cilantro stems, celery, and shallots.
Cover the pot and reduce the heat to medium-low. Cook for 30 minutes.
Strain the soup through a sieve and discard the solids. Return the soup to the pot.
Increase the heat to high and add the shrimp and fish sauce. Cook for 2 minutes until the shrimp are done.
Remove the pot from the heat and add the lime juice.
Serve with sprinkled cilantro.
