Spicy Shrimp Soup

If you like spicy soups, you will love this one! In northern Thailand, it is typical to prepare spicy soups like this. The shrimp take on a delicious flavor!

  • 3/4 kilos shrimp
  • 2 tablespoons vegetable oil
  • 6 árbol chiles
  • 3 canned chicken broth, 15.75-ounce cans
  • 10 slices ginger, fresh peeled and crushed
  • 2 1/2 teaspoons lime zest
  • 4 serrano chiles, chopped, peeled, and seeded
  • 1 sprig fresh cilantro
  • 1 sprig lemon cane, lemongrass, peeled and chopped
  • 2 shallots, peeled and halved
  • 3 tablespoons fish sauce, tai
  • 3 tablespoons lime juice
  • 1/2 cups fresh cilantro

  • Peel the shrimp, reserving 6 shells and place on a plate.
  • Add the oil to a large pot over medium-high heat.
  • Add the dried chiles and shrimp shells, frying them for 3 minutes until the chiles are dark.
  • Add the chicken broth and wait for it to boil. Add the ginger, serrano chiles, cilantro stems, celery, and shallots.
  • Cover the pot and reduce the heat to medium-low. Cook for 30 minutes.
  • Strain the soup through a sieve and discard the solids. Return the soup to the pot.
  • Increase the heat to high and add the shrimp and fish sauce. Cook for 2 minutes until the shrimp are done.
  • Remove the pot from the heat and add the lime juice.
  • Serve with sprinkled cilantro.
