Sweet Potato Soup with Apple

This is a simple and easy-to-make soup that has a rich flavor. The apples, lemon juice, and sweet potatoes give it a different twist!

  • 2 sweet potatoes, large, cut into chunks
  • 2 Golden Delicious apples, peeled and diced
  • 2 teaspoons olive oil
  • 1 onion, finely chopped
  • 2 sprigs celery, chopped
  • 2 carrots, chopped
  • 5 cups chicken broth, or vegetable if vegetarian
  • lime juice, of one
  • sour cream, (optional)
  • 1 bay

  • Put the olive oil in a large pot and sauté the onion until it is translucent.
  • Add the rest of the vegetables and sauté for a little longer.
  • Put the chicken broth (or vegetable), the apples, one bay leaf, and cover the pot so that all the vegetables cook.
  • Once all the vegetables are soft, remove the bay leaf and blend the soup in a blender.
  • Season with salt and pepper to taste. Add the lemon juice.
