2 sweet potatoes, large, cut into chunks
2 Golden Delicious apples, peeled and diced
2 teaspoons olive oil
1 onion, finely chopped
2 sprigs celery, chopped
2 carrots, chopped
5 cups chicken broth, or vegetable if vegetarian
lime juice, of one
sour cream, (optional)

Put the olive oil in a large pot and sauté the onion until it is translucent.
Add the rest of the vegetables and sauté for a little longer.
Put the chicken broth (or vegetable), the apples, one bay leaf, and cover the pot so that all the vegetables cook.
Once all the vegetables are soft, remove the bay leaf and blend the soup in a blender.
Season with salt and pepper to taste. Add the lemon juice.
