Heat water in a pressure cooker or pot until it starts to boil. Place the beef tripe (menudo) in pieces inside when the water is ready. (About three-quarters of water and the rest tripe)
Add one and a half onions cut in half into the boiling water along with the tripe. Also add salt and a sprig of mint.
While the meat is cooking with the onion, in another container, heat water along with the four guajillo chiles until they become tender.
Remove the stems when the chiles are ready and blend them with the water in which they were cooked. Strain the mixture over the beef tripe in the pot. Be careful not to let any seeds or anything other than blended chili fall in.
When the mixture is boiling, lower the heat and keep an eye on the menudo, stirring every so often.
