Chayote soup

  • 1/4 onions
  • 1 clove garlic
  • 1 celery
  • 2 cups vegetable broth
  • 1/4 cups parsley
  • salt
  • pepper
  • vegetable oil
  • 1/4 cups onion, finely chopped
  • 2 chayotes, in medium cubes
  • 1 pumpkin, in medium cubes
  • salt
  • 4 cups water
  • 1/2 cups rice
  • panela cheese, in small cubes
  • baked toast

  • Blend the onion, garlic, celery, vegetable broth, parsley, salt, and pepper. Set aside.
  • Heat the oil in a pot and sauté the onion for 2 minutes. Add the chayote and zucchini, season with salt and cook for 3 minutes.Pour in the broth, add the rice, cook for 15 more minutes and adjust the seasoning.Add more water or vegetable broth if necessary.
  • Serve the chayote soup, garnish with cheese cubes, and accompany with baked tostadas.
