Chayote Soup with Shrimp

If you don't know how to make vegetable soup yet, this chayote soup with shrimp recipe will turn you into a kitchen professional. Served with lime and a few cilantro leaves, it's perfect to include in your weekly menu and enjoy with your family. Don't forget to add the shrimp at the end, so they don't become chewy.

  • 2 cups chayote, peeled and in medium cubes
  • 4 cups water
  • 2 cups vegetable broth
  • 1 green onion, with tail, chopped into slices, include stem
  • 1 cup Roma tomato, seedless, chopped into cubes
  • 1 tablespoon vegetable oil
  • salt
  • pepper
  • 1 cup chayote, cooked and cut into cubes
  • 1 1/2 cups shrimp, clean
  • 2 tablespoons fresh cilantro
  • fresh cilantro, for garnish
  • lime, for accompaniment

  • Heat the water over medium heat, add the chayotes and salt, and cook for 30 minutes or until cooked.
  • Blend the chayotes with vegetable broth, green onion, and tomato. Set aside.
  • In a pot, heat the oil over medium heat and pour in the soup; season with salt and pepper.
  • Add the chayotes, cook for 10 minutes, add the shrimp, and cook for 3 more minutes.
  • Serve hot, accompanied by a refreshing drink.
