Minestrone Soup with La Huerta Country Mix

  • 250 grams La Huerta® Mezcla Campesina
  • 2 chicken breasts, , cooked and shredded
  • 120 grams elbow pasta
  • 1/4 onions, chopped
  • 2 stems celery, chopped
  • 1/2 cups tomato purée
  • 1 liter chicken broth
  • salt, to taste
  • pepper, to taste

  • Cook the pasta according to the package instructions.
  • Defrost the La Huerta Country Mix in the microwave.
  • Heat a medium pot with a little oil and sauté the onion and celery, add the tomato puree and chicken broth.
  • When the broth boils, add the shredded chicken, elbow pasta, La Huerta Country Mix, and season with salt and pepper.
  • Let it boil for another 3-4 minutes.
