Pear and Zucchini Soup

Delicious soup made with zucchini, carrot, and potato, with a surprising flavor as the pear adds a delightful taste.

  • 3 tablespoons olive oil, or butter
  • 1 carrot, peeled and chopped into pieces
  • 1 onion, medium, peeled and chopped
  • 1 potato, peeled and chopped into small pieces
  • 1/2 tablespoons fresh thyme
  • 4 zucchinis, medium, chopped into pieces
  • 2 pears, ripe and chopped
  • 4 cups chicken broth

  • Chop the onion, carrot, potato, zucchini, and pears.
  • Put the olive oil in a pot over medium heat and add the carrot, onion, potato, and thyme. Add salt and pepper. Stir occasionally, adjusting the heat so the vegetables do not brown.
  • When the onion is soft (for about 5 minutes), add the zucchini and continue cooking until everything is tender, about 10 to 15 minutes.
  • Add the pear and cook until soft (about another 5 minutes).
  • Add the chicken broth and wait for it to boil. Adjust salt and pepper if necessary.
  • When the broth cools down a bit, put everything in the blender to puree.
  • Return to the pot and serve hot. It can be garnished with a little light cream if desired.
