Zucchini Soup

A delicious zucchini soup, a recipe you can't miss, is ideal to start any meal and is also healthy.

  • 3 tablespoons olive oil , or butter
  • 1 carrot , peeled and chopped into pieces
  • 1 onion, medium peeled and chopped
  • 1 potato , peeled and chopped into pieces
  • 1/2 tablespoons fresh thyme
  • 4 zucchinis, medium chopped into pieces
  • 4 cups chicken broth
  • pepper

  • Chop the onion, carrot, potato, and zucchini.
  • Put the olive oil in a pot over medium heat and add the carrot, onion, potato, and thyme. Add salt and pepper. Stir occasionally, adjusting the heat so the vegetables do not brown.
  • When the onion is soft (about 5 minutes), add the zucchini and continue cooking until everything is soft, between 10 and 15 minutes.
  • Add the chicken broth and wait for it to boil. Adjust salt and pepper if necessary.
  • When the broth cools a bit, put everything in the blender to make a puree.
  • Return to the pot and serve hot.
