Cook the zucchini in two cups of water, add salt and pepper, and cook in a covered pot until soft.
Reserve one cup of zucchini and chop it for garnish.
Blend the rest of the zucchini with the onion and cilantro. Strain through a food mill or a sieve and return to the pot, adding one cup of water, bring to a boil, and cook for 3 more minutes.
Add broth, salt, and pepper to taste.
To serve, add the reserved chopped zucchini and a few cilantro leaves.
