Melt the butter in a cast iron skillet over medium heat and sauté the onion until it changes color to a bright tone. Add the chicken cubes and garlic powder and cook for 8 minutes or until the chicken looks golden.
Add the Hydroponic Baby Spinach Eva®, fold in gently, and cook for 2 minutes. When you see the spinach starting to reduce in volume, it will be time to add the sour cream and milk. Mix until all the ingredients achieve a uniform tone. Finally, incorporate the manchego cheese and mozzarella cheese, then season with salt and pepper and cook for a few more minutes or until the cheese melts.
