Creamy Spinach with Chicken and Cheese

  • 3 cups Eva® Hydroponic Baby Spinach
  • 3 tablespoons butter, in cubes
  • 1/2 cups onion, finely chopped
  • 400 grams chicken breast, in medium cubes
  • 1 teaspoon garlic powder
  • 2 cups sour cream
  • 1/2 cups milk
  • 1 cup Manchego cheese, shredded
  • 1 cup Mozzarella cheese, shredded
  • salt, for seasoning
  • pepper, for seasoning
  • serrano chile, finely chopped
  • tortilla chips, baked

  • Cut the Hydroponic Baby Spinach Eva® into thin strips and set aside until use.
  • Melt the butter in a cast iron skillet over medium heat and sauté the onion until it changes color to a bright tone. Add the chicken cubes and garlic powder and cook for 8 minutes or until the chicken looks golden.
  • Add the Hydroponic Baby Spinach Eva®, fold in gently, and cook for 2 minutes. When you see the spinach starting to reduce in volume, it will be time to add the sour cream and milk. Mix until all the ingredients achieve a uniform tone. Finally, incorporate the manchego cheese and mozzarella cheese, then season with salt and pepper and cook for a few more minutes or until the cheese melts.
  • Serve the creamy spinach with chicken and cheese, add a bit of chopped serrano chili and accompany with baked tortilla chips.
