Place the rice in a colander and rinse with plenty of water until it runs clear, to remove excess starch.

Soak for 5 minutes in warm water.

Dry very well.

Fry with plenty of oil and without moving too much to avoid breaking it (depending if it will be white or red rice, let it take color or not). This step is very important to avoid overcooking.

Remove excess oil.

Add water and salt (the water should be double the amount of rice and make sure to measure the liquid very well).

Once it starts to boil, lower the heat, cover, and let it cook for 30 minutes without uncovering or until the liquid has been absorbed.
