It is recommended to always clean and meticulously cut the vegetables you are going to freeze. Almost all of them should be precooked by blanching them in boiling water. However, not all can be successfully frozen. Asparagus, for example, breaks and becomes limp and wet when frozen. Other vegetables that do not freeze well are beets, whole or cut carrots, cauliflower, cucumber, eggplant, fennel, leafy vegetables, leeks, potatoes, radishes, zucchini, and squash. Below we indicate how to handle some vegetables to freeze them properly.

Sweet Potato	Cook the sweet potatoes and mash them before freezing. Cool them before storing in the freezer.	Lasts up to 6 months
Broccoli	Blanch small pieces of broccoli for 3 minutes. Cool in ice water. Drain well and store in the freezer.	Lasts up to 12 months
Squash and Zucchini	Cook all squash and mash before freezing. Cool before storing in the freezer. Cook all zucchini and mash before freezing. Cool before storing in the freezer.	Lasts up to 6 months
Onions	Store chopped onions, green onions, and chives separately in the freezer.	Lasts up to 6 months
Brussels Sprouts	Blanch chopped Brussels sprouts for 3 to 5 minutes, depending on the size of the head. Cool in ice water. Drain well and store in the freezer.	Lasts up to 12 months
Spinach	Blanch whole leaves for 2 minutes. Cool in ice water. Drain well and store in the freezer.	Lasts up to 6 months
Peas	Blanch shelled peas for 2 minutes. Cool in ice water. Drain well and store in the freezer.	Lasts up to 12 months
Cooked Vegetables	Blanch whole leaves for 2 minutes. Cool in ice water. Drain well and store in the freezer.	Lasts up to 6 months
Green Beans	Blanch trimmed green beans for 3 minutes per 500 g. Cool in ice water. Drain well and store in the freezer.	Lasts up to 12 months
Corn	Blanch whole ears for 4 to 8 minutes, depending on the size of the ear. Cool in ice water. Cut the kernels or leave the ears whole and store in the freezer.	Lasts up to 6 months
Okra	Blanch whole or cut okra pods for 4 minutes. Cool in ice water. Drain well and store in the freezer.	Lasts up to 6 months
Pepper	Pack raw chopped peppers and store them in the freezer.	Lasts up to 12 months
Peas	Blanch snow peas for 2 minutes. Cool in ice water. Drain well. Spread them in a single layer on a baking sheet. Freeze, then store in the freezer.	Lasts up to 9 months
Tomatoes	Blanch all tomatoes for 2 minutes. Cool in ice water. Drain well and freeze for later use. Tomato sauce also freezes well.	Lasts up to 12 months
Root Vegetables	Cook whole carrots and mash them before freezing. (Whole or cut carrots do not freeze well). Cook whole parsnips and mash them before freezing. (Whole or cut parsnips do not freeze well). Cool before storing in the freezer. Cook whole turnips or rutabagas and mash or puree them before freezing. Cool before storing in the freezer.	Lasts up to 6 months
