Ingredients

  • 1 sweet potato medium
  • carrots medium peeled and sliced

    Preparation

    Preheat the oven to 375 degrees. Wash and dry the sweet potato and prick the surface with a fork. Bake until tender (45 minutes).
    Meanwhile cook the carrots in a pot with little water for 20 minutes.
    When the sweet potato is tender, let cool a little and then cut in half and remove all the meat from the sweet potato.
    Puree the sweet potato, carrots and add a few tablespoons of the water where you cooked the carrots if necessary to achieve a smooth consistency.
