For lovers of artichokes, prepare these delicious boiled artichokes served with vegan pesto sauce, made with pine nuts, fresh basil leaves, lemon juice and olive oil. It will be the perfect entrance!

Ingredients

10 servings
  • 2 pieces of artichoke
  • enough of Water
  • 2 pieces of yellow lemon
  • 1/2 Cup of pinion for the dressing
  • 1 Cup of basil for the dressing
  • 1 clove of garlic for the dressing
  • 1 tablespoon of lemon juice for the dressing
  • 1/4 of Cup of Water for the dressing
  • 2 spoonfuls of olive oil for the dressing
  • 1 pinch of salt and pepper for the dressing

    Preparation

    To clean the artichokes, with the help of a knife cut the top of each without reaching half. Cut the tips of the leaves with scissors and remove the smaller leaves from the bottom. Peel the stems and cut the bottom.
    Add the artichokes to a pot of boiling water and salt, add the yellow lemon juice and cook for about 50 minutes or until a leaf is removed, it easily detaches.
    For the pesto, in a food processor, process the pine nuts with the basil, garlic, lemon juice, water and olive oil. Season with salt and pepper.
    Serve the artichoke with the dressing and enjoy.
