Ingredients

12 portions
  • pineapple jams, Clemente Jacques ®
  • 100 grams vegetable shortening
  • 750 grams flour
  • 1 stick butter
  • 15 grams active yeast, or 5 grams baking powder
  • 15 grams baking soda
  • 150 milliliters milk
  • 2 eggs
  • 1 tablespoon vanilla essence
  • 10 salt
  • 75 grams sugar
  • 1 egg, shake for varnishing

Preparation

Dissolve the yeast in two tablespoons of warm milk.
In the bowl of a blender mix flour and baking powder with a spoon. On them add butter and butter. Mix until they are sandy.
Flour a clean surface and place the previous mixture. It forms a kind of volcano and at the center it adds salt, sugar, and eggs.
When fully integrated, bring the dough to the blender and incorporate milk, yeast and vanilla. Mix but not too much, there should be a dough that stretches well.
Return the dough to the table and stretch with the help of a floured rolling pin. If when passing the fingers through the mass, it will be perfect. Bend the dough once more and stretch again. You should have a dough about 2 cm high.
With the help of a circular cutter or glass form the bísquets, and with a tequilaro horse or smaller circular cutter form the "ombliguitos" or circles in the middle, should be superficial marks, do not make too much pressure to not separate that part.
Arrange them in a tray oiled with butter or cooking spray. Garnish them with a beaten egg yolk and a brush or with your fingers.
Let the bistequets rest for 45 minutes at room temperature, they will grow a little, this is due to the yeast.
Bake at 200 ° C for 15 minutes, I recommend you check them constantly.
Let them cool a bit before cutting them, add a small piece of butter and sprinkle the Clemente Jacques ® Pineapple Jam, serve immediately.
