Ingredients

8 portions
  • 180 grams flour
  • 1 sachet yeast
  • 3 eggs
  • 150 grams Emmental cheese, grated
  • 10 milliliters extra virgin olive oil
  • 10 milliliters milk
  • 100 grams bacon
  • 100 grams green olive, deboned, drained, washed and cut into pieces
  • 100 grams black olive, deboned, drained, washed and cut into pieces
  • ground peppers, to taste
  • 1 pinch salt
  • spray butters, necessary amount

Preparation

Preheat the oven to 180 ° C.
In a pan brown the strips of bacon. When you are ready, put it on a plate with absorbent paper to remove excess fat.
In a bowl mix the flour with the yeast.
In another bowl, beat the eggs, and add the milk, olive oil, salt and pepper.
Once well mixed these ingredients, pour them little by little to the flour stirring well to avoid the lumps until the mixture is homogeneous.
Once the mixture is ready, add the grated cheese, the bacon and the olives.
Grease a cake pan with butter spray. Pour the mixture carefully.
Bake for 45-50 minutes. You will confirm that the cake is ready when it is removed with a toothpick or a knife.
When it is ready, remove it from the oven, let cool and unmold. Serve it cut into pieces, and if it is for an appetizer, cut into squares.

You can substitute pork bacon for turkey bacon.
