Learn how to make homemade churros with this recipe that combines very common flavors in Mexico, a crunchy texture and a soft filling. These cheese filled churros are easier to make than you might think and you won't regret making them. As a dessert or for breakfast or snack, you have to try these Mexican churros.

Ingredients

4 portions
  • 1 cup Water, for the mass
  • 1 teaspoon salt, for the mass
  • 1 tablespoon sugar, for the mass
  • 1 cup butter, for the mass
  • 150 grams flour, for the mass
  • 4 San Juan® Eggs, for the mass
  • 1/2 cups guava, seedless, for sweet
  • 1 cup piloncillo, granulated, for sweet
  • 1/2 cups Water, for the sweet
  • 1 raja cinnamon, for the sweet
  • 1 piece (if it appears in the ingredient) star anise, for the sweet
  • 2 cups cream cheese, at room temperature for filling
  • 1/4 cups powdered sugar, for the filling
  • enough sugar, mixed with cinnamon, to decorate

Preparation

Heat the water with salt, sugar and butter in a saucepan until melted, stir to integrate; When it is boiling, add the flour and beat vigorously with a balloon until it is perfectly incorporated for 5 minutes. Remove from the heat, let cool and transfer to a blender bowl. Start beating and add the pieces of Huevo San Juan® one by one, without stopping beating. Reservation.
Make a plastic bottle duya: make a star-shaped cut to the cap and cut the bottle from the first quarter. Use the duya you made with a plastic bag and empty the churro dough.
Heat plenty of oil and cook the churros; cut with the help of scissors to the desired size. Fry each churro for approximately 5 minutes, until it is completely cooked and you get the desired color. While they're still hot, sprinkle in the mixed sugar and cinnamon.
For the guava honey, cook the guavas with the water, the brown sugar, the cinnamon and the star anise in a pot; boil for 10 minutes until light honey becomes.
Beat the cream cheese with the icing sugar until you have a homogeneous mixture. Place in a resealable bag, trim the tip of the bag and reserve.
Cut one end of the churros and fill with the help of the bag or sleeve, accompany with the guava honey. You can decorate the plate with guava and mint. It's time to enjoy!

PRESENTATION

Sprinkle with brown sugar and cinnamon; garnish with guava and mint.

TIPS

It is very important to add the egg once the dough is cold and little by little. Get a lid the size you want your churros to be and use it as a duya.
