Give a big twist to this traditional sweet bread! We tell you how to make matcha conchas, an easy recipe with this ingredient that has become a must in Mexican cuisine. Matcha is ground green tea that has become a perfect complement in desserts, fresh dishes and even in smoothies. Ingredients

10 portions
  • 2/3 cups milk, tibia
  • 8 grams dry yeast
  • 1/3 cups sugar
  • 3 cups flour
  • 2 tablespoons milk powder
  • 2 tablespoons matcha
  • 1 tablespoon salt
  • 2 eggs, beaten
  • 4 tablespoons butter, at room temperature
  • 125 grams butter, for the crust
  • 125 grams powdered sugar, for the crust
  • 125 grams flour, for the crust
  • 1 tablespoon matcha, for the crust
  • enough refined sugar, to sprinkle
  • enough matcha, to decorate

Preparation

Preheat the oven to 180 ° C (356F)
Dissolve the yeast with warm milk.
Add the milk with the yeast, sugar, flour, milk powder, matcha tea and salt to the blender. Beat until integrating, add the eggs, butter and continue beating approximately 10 minutes or until you have a consistency of elastic and homogeneous mass.
On a floured surface, shape and knead lightly with your hands. Place in a greased bowl, cover with plastic wrap and ferment for 1 hour or until doubled in size.
For the crust, in the blender beat the butter with the powdered sugar, the flour and the matcha tea until they integrate without overdoing it. Cover with plastic wrap and refrigerate.
Place the shell dough on the previously floured table and press down with your fingers to remove the air, divide the dough into portions of approximately 60 g and form the conchas or shells.
Place the balls of dough in a baking tray previously greased and floured. Cover each ball of dough with a little of the crust and mark lines upon them with a knife or with the cookie cutter. Sprinkle with sugar and let them rise again about 20 more minutes or until they double in size.
Bake the shells 12 minutes or until they are cooked, remove from the oven and let cool.
Sprinkle the shells with more matcha green tea and serve.

PRESENTATION

Sprinkle with more matcha and accompany with cold milk.

TIPS

Grease your bowl so that the dough does not stick.
