Ingredients

6 portions
  • 300 grams flour
  • 100 grams butter
  • 1 tablespoon salt
  • 1 teaspoon baking soda
  • 1/2 cups milk
  • 1 onion, slice
  • 1/4 liters cream
  • salt, and pepper to taste
  • 200 grams manchego cheese, grated
  • 1/2 kilos poblano pepper, peeled and in rajas
  • 1 egg

Preparation

Sift the flour, the baking powder and the salt.
Add the butter and milk, beat until it forms a soft dough. Divide it into two parts.
Extend one of the parts with a rolling pin, and place on a previously greased mold. Cover the bottom of the mold with the dough. With a fork or knife make several pickets so that the dough does not inflate at the time of baking.
Make a sofrito with the onion and poblano slices, let it cook until the onion looks transparent. Next add the cream, mix and season with salt and pepper to taste.
Place the filling in the pie pan, add grated cheese throughout the mixture. Cover with the other part of dough that we reserve and varnish with egg with a brush. Make some pickets on the top to let the pay breathe.
Bake for 30 minutes at 250 ° C.
