Ingredients

14 servings
  • 250 grams of flour
  • 60 grams of sugar
  • 5 grams of Salt
  • 5 grams of yeast
  • 75 grams of Butter
  • 2 pieces of egg
  • 75 milliliters of milk
  • 1 piece of orange
  • 1 piece of green lemon
  • 50 grams of vegetable shortening
  • 50 grams of sugar
  • 50 grams of flour
  • 20 grams of quince paste
  • 20 grams of guava paste
  • 20 grams of cherry
  • 30 grams of cherries in syrup

    Preparation

    Preheat the oven to 45 ° C.
Combine the flour, sugar, salt and eggs in a bowl of blender . Beat until the dough peels off the walls.
Slow down and add the yeast together with the milk and butter, beat until you have a homogeneous mass.
Grease the inside of a Ziploc® bag with a little oil and put the dough in the bag. Let it rest for 30 minutes or until it doubles its volume.
Remove the dough from the bag and add the orange and lemon zest. Mold the dough to give it a screw shape, varnish the surface with a beaten egg. Cut the ates into thin poles and place them on the thread alternating them, leaving enough space to put between the cherries and the sugar crust.
For the sugar crust; Acrema the shortening with the sugar inside a Ziploc® bag, add the flour and knead until it has a homogeneous paste.
Place the sugar crust on the thread. Put the thread in a baking tray, place a tray with a little water inside the oven and put the thread. Let it ferment for about 10 minutes at 45 ° C. This is with the intention of doubling its volume.
Raise the oven temperature to 180 ° C, remove the water pan and bake the thread for 45 minutes or until it is fully cooked.
Remove from oven, let cool complete and serve.
