These eggs are delicious and are ideal for breakfast, with their creamy hollandaise sauce and delicious poached eggs. It will be the ideal dish to start your day full of energy, surprise everyone with this recipe.

4 portions
  • 3 San Juan® Egg Yolks
  • 1 tablespoon lemon juice
  • 45 grams butter
  • 1 pinch salt
  • 1 pinch black pepper
  • 8 cups Water
  • 4 slices Ham
  • 4 San Juan® Eggs
  • enough butter, spreading
  • 4 bagels
  • 2 cups spinach
  • 1 beefsteak tomato, in slices
  • to taste chives, finely chopped to decorate

For the sauce, place the San Juan® egg yolks in a bowl and place over the pot to bake them in a bain-marie, add the lemon juice, continue whisking until they sponge.
Pour the melted butter and continue beating until emulsified and obtain a thick sauce like mayonnaise.
On a glass place non-stick plastic, break a San Juan® Egg on it and tie a knot.
In a saucepan over medium heat heat the water and place the San Juan® egg, cook for 3 minutes.
Cut the bagel bread in half, place a slice of ham on top, a slice of tomato add the spinach, the egg, dip with the hollandaise sauce and garnish with green onions.


With a salad of lettuce mixture.


So that the dressing is not cut, add the lemon in the form of thread.
