For the sauce, place the San Juan® egg yolks in a bowl and place over the pot to bake them in a bain-marie, add the lemon juice, continue whisking until they sponge.
Pour the melted butter and continue beating until emulsified and obtain a thick sauce like mayonnaise.
On a glass place non-stick plastic, break a San Juan® Egg on it and tie a knot.
In a saucepan over medium heat heat the water and place the San Juan® egg, cook for 3 minutes.
