A rich breakfast of eggs Benedict with smoked salmon and a hollandaise dill sauce, a delicious dish that will fill you with energy. Give a different touch to your way to start the day preparing these eggs that you will love.

  • 3 tablespoons shallot, chopped
  • 2 teaspoons mustard powder
  • 1 1/2 cups dry white wine
  • 3/4 cups whipping cream
  • 3 tablespoons White wine vinegar
  • 12 eggs
  • 1 package bread, toasted
  • 600 grams smoked salmon, in thin slices
  • 3 egg yolks
  • 3 tablespoons fresh dill, chopped


Mix the echallot with the mustard powder in a medium saucepan. Little by little, add the wine. Cook over high heat, until reduced to 1/2 cup, beating constantly for about 10 minutes.
Add the cream, salt and pepper.
Fill a pot with cold water, cook over high heat and wait for it to boil. Add the vinegar and leave the medium-low heat.
Place each egg in a cup (separately) and add to the boiling water very carefully.
Cook until the egg whites are cooked, about 3 minutes. With a spoon, pass the eggs to a refractory with cold water and let stand. Reserve the pan with water and vinegar.
Place 2 slices of bread on each plate and cover with slices of salmon.
Boil the water with vinegar again. Place the cream sauce from step 1 over the pot with water in a bain-marie and once hot, add the egg yolks to the cream sauce.
Beat without stopping until the sauce thickens, about 4 minutes.
Add the chopped dill and beat another minute. Reservation.
With a spoon with holes, pass the eggs again to the water with vinegar over low heat; until they are hot, about 30 seconds.
Place the eggs on the bread with salmon and pour sauce on top. Garnish with sprigs of dill.


You can cut the bread in a circular shape with the top of a glass to make it more beautiful.
