Mix flour, baking powder, cinnamon, salt, and nutmeg in a bowl.
In another deep bowl, mix 1/4 cup of the brown sugar with the eggs, milk, vanilla and oil. Pour this mixture with the flour mixture and mix with a balloon whisk. Add the carrot and mix a little more.
Heat a large skillet and grease with cooking spray. With a spoon to serve soup place a portion (1/4 cup) in the pan and cook for 2 minutes or until you have many bubbles, turn and cook for 1 minute more.
Repeat this with all the dough. Keep the hotcakes hot while you finish doing the rest.
