Chipotle Chicken Chilaquiles

Prepare these delicious chicken chilaquiles with a rich creamy chipotle sauce accompanied with avocado, purple onion, cilantro, cream and queso fresco. They are ideal for breakfast time or a brunch. An exceptional flavor that will remind you of Mexico!

Ingredients

4 servings
  • 1 tablespoon of oil
  • 1 clove of garlic
  • 1/2 piece of onion in pieces
  • 5 pieces of tomato roughly chopped
  • 3 pieces of allspices
  • 1/2 teaspoonful of cumin
  • 1 1/2 cups of chicken soup
  • 1 tablespoon of coriander whole
  • to taste of Salt
  • 1/4 of Cup of chipotle peppers in adobo sauce
  • 1 Cup of sour cream
  • 1/2 Cup of cream cheese
  • 6 cups of Chilaquiles chips Northgate
  • 1 piece of chicken breast cooked and shredded
  • to taste of sour cream
  • to taste of fresh cheese fallen apart
  • to taste of red onion filleted, to decorate
  • to taste of avocado in slices, to decorate
  • to taste of coriander cool, to decorate

    Preparation

    For the sauce, in a saucepan over medium heat, heat the oil and cook the garlic, onion and tomatoes until they begin to dissolve, about 20 minutes.
    Add the whole black pepper, cumin, chicken broth, cilantro, salt and cooking until it is reduced by half. Remove from cooking.
    Blend the previous preparation with the chipotle chili, the sour cream and the cream cheese. Season to taste and set aside.
    Place 1 ½ cups chilaquiles Northgate tortilla chips on each plate, add the chicken, cover with the hot sauce and serve with cream, fresh cheese, onion, avocado and cilantro.

    PRESENTATION

    Decorate the chilaquiles with more cream, queso fresco, red onion, avocado and cilantro.

    TIPS

    If you want your chilaquiles to be crispy, add sauce, decorate and serve. Otherwise, you can add the tortilla chips to the sauce and cook a few minutes to soak.
