Chipotle Chicken Molletes (Muffins)

Prepare these delicious chipotle chicken molletes au gratin with Manchego cheese and served with slices of avocado. They are very tasty and quick dish to prepare, perfect for breakfast or dinner. The best thing is that you can have them with grape juice such as Jugo del Valle 100% Uva. Molletes with cheese are a versatile dish since you can add different ingredients and make delicious variations; as on this occasion we did a chicken preparation with bacon, cream and chipotle. The molletes are served in some countries of Latin America and in Spain, where each culture varies in the ingredients used for its preparation.   • 1/2 cups bacon, finely chopped
  • 3 tablespoons onion, finely chopped
  • 1 teaspoon garlic, finely chopped
  • 2 cups chicken, in cubes
  • to taste salt and pepper
  • 3/4 cups sour cream
  • 1/4 cups evaporated milk
  • 2 tablespoons Chile chipotle milled
  • 1 tablespoon oil
  • 1 cup refried beans
  • 1 teaspoon cumin
  • 5 Mexican french bread rolls
  • 3 tablespoons butter
  • 1 1/2 cups manchego cheese, grated
  • 1 avocado, in slices
  • 1/4 red onions, filleted


Preheat the oven to 180 ° C (356F)
For the filling, in a deep frying pan over medium heat, fry the bacon until it is crispy. Add the onion, garlic and cook for 3 minutes. Add the chicken, season with salt and pepper and cook until browned.
Add the cream, the evaporated milk and the ground chipotle pepper and cook until it thickens, season and set aside.
Heat the beans with oil in a skillet over medium heat and season with cumin, salt and pepper. Set aside.
Cut the rolls in half, remove the crumb if desired and spread with a little butter. Heat in a pan or on a grill and toast the loaves over medium heat until browned.
For the assembly, spread a little beans in each roll, add the chicken and sprinkle with the Manchego cheese.
Arrange the molletes on a baking tray and bake 10 minutes or until the cheese melts. Remove and serve with slices of avocado, purple onion and the sauce of your choice.


Serve the molletes with avocado, purple onion and with sauce.


Take care that the filling is not too liquid, to prevent the bread from becoming soggy.
