Creamy Enfrijoladas Stuffed with Egg to the Mexican

Prepare this wonderful and delicious breakfast of Enfrijoladas with a creamy and spicy sauce with the touch of chipotle chile, stuffed with Mexican egg, served with cream, fresh cheese and fried chorizo. This combination is exquisite.

Ingredients

  • 1/2 Cup of oil for frying enfrijoladas and for egg
  • 1/4 of Cup of White onion finely chopped
  • 1/2 Cup of tomato gourd finely chopped
  • 2 pieces of chile serrano
  • 5 pieces of egg
  • 1 pinch of Salt
  • 1 Cup of Bay beans cooked
  • 1/2 Cup of sour cream
  • 3 pieces of Chipotle pepper
  • 9 pieces of Corn tortillas
  • 1/4 of Cup of sour cream
  • 1/4 of Cup of fresh cheese grated
  • 1/4 of Cup of sausage fried
  • 2 spoonfuls of coriander finely chopped

    Preparation

    Heat a pan over medium heat with a tablespoon of oil, fry the onion, tomato and chile serrano, add the beaten egg with a fork and stir until the ingredients are well cooked, season to taste with salt and reserve.
    Add cooked beans, cream and chipotle chili to the blender, blend for 5 minutes or until you get a smooth sauce, season to your liking. Pour the sauce into a pot and cook for 10 minutes, reserve.
    Heat a pan over medium heat and fry the tortillas until soft, remove the excess grease with absorbent paper. Fill the tortillas with the previously cooked Mexican egg and place 3 pieces on a plate, bathe with the bean sauce, serve with cream, cheese, chorizo ​​and cilantro.

    PRESENTATION

    Accompany with cream and decorate with cheese, chorizo ​​and finely chopped cilantro.

    TIPS

    You can cook the ingredients of the beaten egg to your taste more sautéed or less sautéed.
