  • 1 tablespoon olive oil
  • 1 clove garlic, finely chopped
  • 1 cup mushroom, filleted
  • 1/2 cups mushroom, filleted
  • 2 portobello mushrooms, filleted
  • 1 green pumpkin, cut into cubes
  • 1 cup Spinach "La Huerta"
  • enough salt
  • enough black pepper
  • 8 eggs
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • enough cooking spray oil
  • 1 avocado, in slices


In a pan over medium heat, heat the olive oil and cook the garlic and mushrooms until they release their juice. Add the squash and spinach, season with salt and pepper, cook until the vegetables are done. Remove and reserve.
In a bowl, beat the egg with salt, pepper, garlic powder and onion powder.
In a Teflon pan, sprinkle a little cooking spray and cook a little of the egg mixture over medium-low heat to form an omelette. Cook until well cooked and remove, repeat until you get four omelette tacos.
Fill the egg omelet tacos with the mushroom mixture and serve with avocado, enjoy.


Serve the omelette like a taco stuffed with mushroom stew. Decorate with avocado and cilantro.


Use a Teflon pan to make your egg omelette, so you will avoid sticking and breaking.
