Ingredients

4 portions
  • 4 eggs
  • 1 package nopal cambray, or clean baby
  • 4 corn tortillas, cut into strips not very long
  • 1 green pumpkin, long and large
  • 1 Bell pepper
  • 1 teaspoon parsley
  • 1 teaspoon chicken bouillon
  • 1/2 cups milk
  • 200 grams manchego cheese, in cubes
  • olive oils, sufficient quantity
  • salt, and pepper to taste

Preparation

Put a pan on the fire and when it is hot add the olive oil, nopales and tortillas, let fry.
When the tortilla strips are firm add the other vegetables and let fry again, if it is a little dry the stew add more olive oil, let cook for 5 to 8 minutes and move.
In a bowl, add the 4 eggs, the milk, the consome, salt, pepper and parsley. Beat lightly and add this mixture to the pan.
Move the preparation, when nopales do not release drool and the egg is cooked, add the cheese over top, cover, let cook at low heat for 5 more minutes, remove from the burner and put to rest the stew covered.

PRESENTATION

It can be served with beans from the pot or refried.

TIPS

Milk and beaten egg make the mixture fluffy.
