With these nopalitos, with omelet and egg you can have a very complete and nutritious breakfast.

Ingredients

4 servings
  • 4 pieces of egg
  • 1 package of nopal cambray or clean baby
  • 4 pieces of Corn tortillas cut into strips not very long
  • 1 piece of green pumpkin long and large
  • 1 piece of Bell pepper
  • 1 teaspoonful of parsley
  • 1 teaspoonful of chicken bouillon
  • 1/2 Cup of milk
  • 200 grams of Manchego cheese in cubes
  • olive oils sufficient quantity
  • Salt and pepper to taste

    Preparation

    Put a pan on the fire and when it is hot add the olive oil, nopales and tortillas, let fry.
    When the tortilla strips are firm add the other vegetables and let fry again, if it is a little dry the stew add more olive oil, let cook for 5 to 8 minutes and move.
    In a bowl, add the 4 eggs, the milk, the consome, salt, pepper and parsley. Beat lightly and add this mixture to the pan.
    Move the preparation, when nopales do not release drool and the egg is cooked, add the cheese over top, cover, let cook at low heat for 5 more minutes, remove from the burner and put to rest the stew covered.

    PRESENTATION

    It can be served with beans from the pot or refried.

    TIPS

    Milk and beaten egg make the mixture fluffy.
