Ingredients

4 servings
  • 2 pieces of egg big
  • 2 pieces of egg white
  • 1 teaspoonful of canola oil
  • 1 piece of tomato in little boxes without seeds
  • 1 scallion finely chopped
  • 1/2 piece of serrano pepper seedless, chopped
  • 1/3 of Cup of tortilla chips baked (not fried)
  • 1/4 of Cup of Manchego cheese reduced in fat
  • Salt
  • black pepper

    Preparation

    Beat the eggs with the egg whites. Heat the oil in a pan on medium heat. Add the eggs and cook, stirring occasionally for a minute
    Add the tomato, chives, chile and squashed tortilla chips. Cook until the eggs are tender.
    Season with salt and pepper, serve on a plate and sprinkle the cheese on top.

    TIPS

    The tortilla chips can be made at home, cutting the tortillas into triangles and putting them in the oven in a tray varnished with cooking spray for 15 minutes.
