Nothing like the craving of delicious chilaquiles, use this recipe to prepare them in a healthier but just as delicious. With only 110 calories per serving!

Ingredients

4 portions
  • 2 eggs, big
  • 2 egg whites
  • 1 teaspoon canola oil
  • 1 tomtato, in little boxes without seeds
  • 1 chives, finely chopped
  • 1/2 serrano peppers, seedless, chopped
  • 1/3 cups tortilla chips, baked (not fried)
  • 1/4 cups manchego cheese, reduced in fat
  • salt
  • black pepper

Preparation

Beat the eggs with the egg whites. Heat the oil in a pan on medium heat. Add the eggs and cook, stirring occasionally for a minute
Add the tomato, chives, chile and squashed tortilla chips. Cook until the eggs are tender.
Season with salt and pepper, serve on a plate and sprinkle the cheese on top.

TIPS

The tortilla chips can be made at home, cutting the tortillas into triangles and putting them in the oven in a tray varnished with cooking spray for 15 minutes.
