Benedictine eggs with ham

These rich Benedictine eggs are prepared with hollandaise sauce, served on toast and ham and covered in hollandaise sauce. Delicious!

Ingredients

2 servings
  • 4 eggs the fresher, the better
  • 3 egg yolks
  • 1/4 of Cup of Water
  • 1 tablespoon of lemon juice
  • 1/2 Cup of Butter in cubes, cold
  • 1/4 of teaspoonful of black pepper
  • 1 pinch of Cayenne pepper optional
  • white vinegars
  • 4 slices of Ham

    Preparation

    Prepare the poche eggs. Fill a pot with water and bring to a boil. Add a splash of vinegar and a little salt.
    Once the water is boiling, lower the fire to make small bubbles in the water.
    Open the eggs in cups and carefully immerse in the boiling water. Repeat with the rest of the eggs taking care not to lower the water temperature.
    Cook for 3-5 minutes and remove with a spoon. Put on a paper towel and reserve. (You can trim the edges if they are ugly).
    Prepare the hollandaise sauce. In a small saucepan over a bain-marie, beat egg yolks, water, and lemon. Cook at VERY low temperature until the mixture bubbles at the edges a little. Add the butter cubes little by little, stirring until the sauce thickens. Season with salt, cayenne pepper, and black pepper. Remove from fire.
    Put toast and place a slice of bent ham on top. Put the poche eggs and bathe with the prepared Dutch sauce.
    Two eggs are served per dish.

    TIPS

    You can cut the bread in a circle with a glass to make it look more beautiful.
