Preparation
Cook the tomatoes in boiling water for 5 minutes.
Cut the tail and remove the vein from the chiles.
Hydrate the chiles in boiling water for 5 minutes.
Blend the tomatoes, onion, garlic clove and guajillo chiles.
Sauté the sauce in a pot with oil and season to taste.
Grease the pans with a little oil, break two eggs in each one.
Pour 2 tablespoons of salsa in each casserole. Chop the chorizo into small pieces and place a little on each casserole.
Bake at 180 ° C for 15 minutes or until the yolk has completely cooked.
Remove from the oven and place a tablespoon of Greek Style Yoghurt Fage® Total 0% in each casserole to enjoy a typical Mexican breakfast.
