Preparation
Heat the oil in a deep pan over high heat, add the potatoes and cook for 5 minutes. Add the onion, cook for 3 more minutes and add the pumpkins until they are slightly soft.
Remove everything from the pan and remove the excess fat.
Beat the eggs in a bowl, add the potatoes, the pumpkins, the Ocean Spray® Craisins® Dehydrated Cranberries, the thyme and the salt, mix until integrated.
Heat in a pan with Teflon two tablespoons of oil over medium heat, add the egg mixture and potatoes. Cook for about 10 minutes; turn and let cook for 2 more minutes.
