A new way to make an omelette made with potatoes and egg with a delicious touch of blueberries. Try this innovative recipe, which is easy to prepare and you will surely love it. Very soft on the inside and golden on the outside.

Ingredients

8 portions
  • 3 potatoes, peeled and cut into slices
  • 2 pumpkins, cut in julienne
  • 1 onion, cut into slices
  • 1/2 cups Ocean Spray® Craisins® Dehydrated Cranberries
  • 4 eggs
  • 4 twigs thyme
  • 3/4 cups oil
  • 2 pinches salt

Preparation

Heat the oil in a deep pan over high heat, add the potatoes and cook for 5 minutes. Add the onion, cook for 3 more minutes and add the pumpkins until they are slightly soft.
Remove everything from the pan and remove the excess fat.
Beat the eggs in a bowl, add the potatoes, the pumpkins, the Ocean Spray® Craisins® Dehydrated Cranberries, the thyme and the salt, mix until integrated.
Heat in a pan with Teflon two tablespoons of oil over medium heat, add the egg mixture and potatoes. Cook for about 10 minutes; turn and let cook for 2 more minutes.

PRESENTATION

Serve in a tray cut into 8 portions.

TIPS

You can accompany with an aioli.
