Preheat the oven to 180 ° C.
In a large skillet, heat the butter and oil. Fry the onion until it is transparent.
Add the grated potato and cook for 4 minutes until it turns color. Then fry the bacon until it is cooked but not very crispy, season. Remove excess fat.
Using a spoon, make space for the eggs by making a hole in each corner of the pan. Place each egg in each space and sprinkle the cheese on top.
Bake for 7 minutes or until the eggs are cooked but with the yolk tender.
Remove from oven, garnish with chopped parsley and serve immediately.
