White Crepes Stuffed with Rajas with Cream

This breakfast will give you the energy to start your day with all the attitude and consists of soft crepes of whites, filled with slices with cream and bathed in a poblano chili sauce. So delicious that it will be impossible to resist!

Ingredients

4 portions
  • 1 cup San Juan® Egg White, for crepes
  • 1/4 cups whole wheat flour, for crepes
  • 1/3 cups milk, for crepes
  • 1 teaspoon onion powder, for crepes
  • to taste salt and pepper, for crepes
  • enough cooking spray oil, for crepes
  • 2 poblano peppers, roasted, without seeds or skin, for the poblano chili sauce
  • 1/3 onions, for the poblano chili sauce
  • 1 clove garlic, for the poblano chili sauce
  • 1/2 cups light cream, for the poblano chili sauce
  • 1 cup milk light, for the poblano chili sauce
  • 2 tablespoons oil, for the poblano chili sauce
  • 1/2 onions, filleted, for the slices with cream
  • 1 tablespoon garlic, finely chopped, for the slices with cream
  • 2 cups Poblano pepper Strips (Rajas), for the slices with cream
  • 3/4 cups corn kernels, for the slices with cream
  • 1 cup light cream, for the slices with cream
  • to taste corn kernels, to decorate

Preparation

Blend the San Juan® Egg Whites with whole wheat flour, milk, onion powder, salt and pepper
In a frying pan, heat the oil spray, pour a little of the crepe mixture and spread. Cook over medium heat until cooked, flip the crepe halfway through cooking.
For the sauce, blend the poblano pepper with the onion, garlic, cream and milk. Heat 1 tablespoon of oil in a saucepan over medium heat and cook the sauce for about 10 minutes, or until thick. Season with salt and pepper.
For the slices with cream, heat the rest of the oil in a skillet over medium heat, cook the onion, garlic, poblano pepper slices, corn kernels and cream, season with salt and pepper and cook for 10 minutes or until thick.
Fill the crepes with the slices with cream, serve with the poblano chile sauce and decorate with corn kernels.

PRESENTATION

On an extended plate, accompanied by a glass of juice.

TIPS

You can substitute wheat flour for amaranth flour.
