Preparation
Clean the mushrooms. In a pan put a little butter, then add the pine nuts and leave them until all the water is consumed.
Place the eggs in a bowl and season with salt and pepper to taste, beat until they are mixed.
Add a little butter in another egg pan, then add the cheese and mushrooms, pour a little of the eggs and cover over them, cook for 5 minutes over low heat or until the omelettes are ready.
Once ready fold in half like a quesadilla and serve.
