Give your breakfast with egg a very simple, tasty and Mexican twist with this recipe for ranchero egg toast. This step by step is ideal for when you want to have a saucer breakfast with a very attractive presentation, so it is perfect if you have guests at home. Ingredients

4 portions
  • 1/4 onions, for the sauce
  • 1 clove garlic, for the sauce
  • 3 serrano peppers, for the sauce
  • 1/4 cups chicken soup, for the sauce
  • 1/4 cups fresh coriander, for the sauce
  • 2 tablespoons oil, for the sauce
  • 4 tomatoes, seeded and diced for sauce
  • to taste salt, for the sauce
  • to taste black pepper, for the sauce
  • 2 tablespoons oil, for the egg
  • 8 eggs
  • to taste salt, for the egg
  • to taste black pepper, for the egg
  • 8 fried or toasted corn tortilla
  • enough pinto beans, refritos to accompany
  • enough fresh cheese, crumbled to accompany
  • enough avocado, in sheets, to accompany
  • enough fresh coriander, (leaves) to accompany

Preparation

For the sauce: on a griddle over medium heat roast the onion, garlic and serrano pepper until cooked. Then blend together with the chicken stock and the cilantro until completely mixed. Reservation.
In a skillet over medium heat, pour the oil, add the tomato in cubes and cook until it changes color. Add the smoothie and season with salt and pepper. Cook for 6 minutes. Reservation.
For the egg: in a Teflon pan, heat oil over low heat, break an egg gently to avoid damaging the yolk and pour over the pan, season with salt and pepper, and cook for 5 minutes or until you get the desired consistency. Reservation.
For the toast: cover a toast with refried beans, place the crashed egg, ranchera sauce, crumbled cheese, avocado and coriander leaves. Serve on an extended plate and enjoy.

PRESENTATION

Accompany with fresh cheese, avocado and cilantro. Serve on an extended plate with coffee and natural juice.
