Ingredients

  • 1 tablespoon oil, for the red sauce
  • 1/8 white onions, for the red sauce
  • 1 clove garlic, for the red sauce
  • 3 tomatoes, for the red sauce
  • 2 dried chile de árbol peppers, deveined and seedless, for red sauce
  • 1/2 cups chicken soup, for the red sauce
  • to taste salt and pepper, for the red sauce
  • 4 cups Water, for green sauce
  • 1/8 onions, for green sauce
  • 1 clove garlic, for green sauce
  • 4 tomatoes, for green sauce
  • 1 serrano pepper, for green sauce
  • 1 tablespoon fresh coriander, for green sauce
  • 3 tablespoons oil, 1 for green sauce and 2 for eggs
  • 8 eggs
  • 8 Northgate corn tortillas
  • 1 cup whole black bean, Cooked
  • to taste sour cream, at your service
  • to taste fresh cheese, crumbled, to serve
  • to taste avocado, in cubes to serve

Preparation

For the red sauce, in a saucepan over medium heat, heat the oil and fry the onion, garlic, tomatoes and chilies until very soft. Add the chicken broth and let reduce in half, season with salt and pepper.
Blend the previous preparation until a smooth sauce is obtained. Set aside.
For the green sauce, in a saucepan over medium heat, boil the water, add the onion, garlic, tomatoes and chili. Cook until the tomatoes change color, about 20 minutes. Drain
Blend the cooked vegetables together with the cilantro until a homogeneous mixture is obtained. Fry in a pot over medium heat with a tablespoon of oil, about 10 minutes. Season with salt and pepper to your taste.
In a pan over low heat, heat two tablespoons of oil and cook the eggs to the desired term, season with salt and pepper.
Heat the Northgate corn tortillas on a comal. Serve a starry egg in each tortilla, a spoonful of green sauce and a sauce of red sauce, whole black beans and decorate with cream, fresh cheese and avocado in cubes.

PRESENTATION

Serve with sour cream, queso fresco and avocado.

TIPS

Cook the eggs covered over low heat to make the yolk remain tender and the egg whites are well cooked.
