Salad of Cucumber and Pancakes of Jamaica

Delicious and original Jamaica-based pancakes without carbohydrates, accompanied by a fresh salad and a spicy avocado puree. Ideal for dinner time and do not go to sleep heavy.

Ingredients

  • 2 cups of Jamaica flower cooked and without liquid
  • 2 pieces of egg
  • 1/4 of Cup of White onion filleted
  • 1 pinch of Salt
  • 1 pinch of Pepper
  • 1 Cup of Coconut flour
  • 4 spoonfuls of coconut oil
  • 1 piece of cucumber cut in half moons
  • 2 cups of Eve® Lettuce
  • 1 Cup of avocado pulp
  • 1 piece of yellow lemon To accompany

    Preparation

    In a bowl mix the cooked Jamaica, the egg, the white onion, season to your liking and add the coconut flour, mix perfectly well so that you form all the pancakes, reserve the pancakes.
    Heat a pan over medium heat with the oil and add the pancakes to cook for 5 minutes on each side. Remove the pancakes and reserve.
    Serve the pancakes with a cucumber salad with lettuce and avocado puree. If you want you can add lemon juice. Enjoy

    PRESENTATION

    Serve as a base the salad and add the pancakes top with a bit of avocado puree and a yellow lemon to accompany.

    TIPS

    Before forming the pancakes you have to make sure that the mixture is completely caked so that when cooking them they do not fall apart.
