Scramble Eggs in Chile de árbol sauce

This traditional, spicy recipe will serve many, made with Scrambled Eggs and Chile de Arbol sauce, which is prepared with red sauce, chile de árbol and you can serve it with refried beans.

For this Mexican recipe, it is best to stir the eggs that you pour in the pan constantly, so it will be cooked more evenly and will have a more fluffy texture. This egg recipe is ideal for breakfast or even for dinner.

  • 4 tomatoes
  • 1/4 of onion
  • 1 clove of garlic without the peel
  • 1 serrano pepper
  • 3 chile de árbol peppers
  • 8 eggs
  • enough of salt and pepper
  • 1 tablespoon of vegetable oil
  • enough of corn tortilla
  • enough of refried beans to serve
  • 4 serrano peppers lightly browned, to decorate
  • enough of fresh coriander


For the sauce, roast the tomato with the onion, garlic, chile serrano and the chile de árbol.
Remove the peel from the garlic and blend with the tomatoes, onions and chilies. Strain if necessary.
In a bowl beat the eggs, season with salt and pepper.
In a pan heat the oil and cook the eggs to taste. Pour the sauce and cook for 5 more minutes to integrate all the flavors. Season to taste.
Serve garnished with a lightly browned serrano chile and cilantro. Accompany with tortillas and refried beans.
