This traditional, spicy recipe will serve many, made with Scrambled Eggs and Chile de Arbol sauce, which is prepared with red sauce, chile de árbol and you can serve it with refried beans.

Ingredients

4 servings
  • 4 pieces of tomato
  • 1/4 of piece of onion
  • 1 clove of garlic without the peel
  • 1 piece of serrano pepper
  • 3 pieces of Chile de árbol pepper
  • 8 pieces of egg
  • enough of salt and pepper
  • 1 tablespoon of vegetable oil
  • enough of Corn tortillas
  • enough of refried beans to serve
  • 4 pieces of serrano pepper lightly browned, to decorate
  • enough of coriander

    Preparation

    For the sauce, roast the tomato with the onion, garlic, chile serrano and the chile de árbol.
    Remove the peel from the garlic and blend with the tomatoes, onions and chilies. Strain if necessary.
    In a bowl beat the eggs, season with salt and pepper.
    In a pan heat the oil and cook the eggs to taste. Pour the sauce and cook for 5 more minutes to integrate all the flavors. Season to taste.
    Serve garnished with a lightly browned serrano chile and cilantro. Accompany with tortillas and refried beans.

    PRESENTATION

    Serve and accompany with corn tortillas and refried beans.
