  • 1 tablespoon olive oil
  • 3 tablespoons onion, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 1 cup poblano pepper, in strips (rajas)
  • 1/4 cups corn, yellow
  • 2 tablespoons sour cream, Light
  • enough salt
  • enough black pepper
  • 4 eggs
  • enough panela cheese, to decorate
  • enough fresh coriander, to decorate


In a pan heat the olive oil and cook the onion with the garlic until they are transparent. Add rajas poblanas, elote, sour cream, salt, pepper and cook for 5 more minutes.
Pour the slices in an earthenware pot and crack the eggs right there, season to taste, cover the casserole with aluminum foil and cook for 15 minutes until the eggs are cooked to the desired taste.
Garnish with panela cheese and cilantro. Serve
