Ingredients

4 servings
  • 1 tablespoon of olive oil
  • 3 spoonfuls of onion finely chopped
  • 1 tablespoon of garlic finely chopped
  • 1 Cup of poblano pepper in strips (rajas)
  • 1/4 of Cup of corn yellow
  • 2 spoonfuls of sour cream Light
  • enough of Salt
  • enough of black pepper
  • 4 eggs
  • enough of Panela cheese to decorate
  • enough of coriander to decorate

Preparation

In a pan heat the olive oil and cook the onion with the garlic until they are transparent. Add rajas poblanas, elote, sour cream, salt, pepper and cook for 5 more minutes.
