Spanish Omelet of Potato

The Spanish omelet or potato omelette, is one of the most typical dishes of the cuisine of Spain, is an egg dish with potatoes bleached in oil and onion, this dish can be served on top, or skewer, is accompanied with brava sauce or aioli.

Ingredients

  • enough of vegetable oil
  • 3 teeth of Garlic with Shell
  • 4 pieces of potato cut into thin sheets
  • 1/2 piece of onion filleted
  • 1 pinch of Salt
  • 1 pinch of Pepper
  • 8 pieces of egg
  • enough of olive oil

    Preparation

    Heat a skillet over medium heat with the oil over medium-low heat and add the garlic to aromatize it. Add the potatoes little by little and cook until they are soft. Add the onion and cook until it is clear, remove from the heat, strain well and cool.
    In a bowl beat the eggs with salt and pepper, add the previous mixture and incorporate well.
    Heat a pan over medium heat with the olive oil, add the previous mixture and cook over low heat until it is cooked, with the help of another pan or plate, turn the tortilla and cook on the other side and until it takes a light golden color From both sides.
    Remove from the skillet turning with the help of a plate, accompany with an aioli. Enjoy

    TIPS

    It is important that the potatoes and onion are very cold before adding them to the egg, you can let the potatoes soak in the egg for 10 minutes or more, so that they take a softer and more delicious consistency.
