Spanish Potato Omelette

The Spanish tortilla or potato omelette, is one of the most typical dishes of the cuisine of Spain, is an egg dish with potatoes bleached in oil and onion, this dish can be served on top, or skewer, is served with brava sauce or aioli.

Ingredients

16 servings
  • enough of vegetable oil
  • 3 cloves of garlic with skin
  • 4 potatoes cut into thin slices
  • 1/2 onion filleted
  • 1 pinch of Salt
  • 1 pinch of black pepper
  • 8 eggs
  • enough of olive oil

Preparation

Heat a skillet over medium heat with the oil over medium-low heat and add the garlic to aromatize it. Add the potatoes little by little and cook until they are soft. Add the onion and cook until it is clear, remove from the heat, strain well and cool.
In a bowl beat the eggs with salt and pepper, add the previous mixture and incorporate well.
Heat a pan over medium heat with the olive oil, add the previous mixture and cook over low heat until it is cooked, turn the potato omelette with the help of another pan or plate, and cook on the other side and until it takes a light golden color from both sides.
Remove from the skillet turning over with the help of a plate, serve with aioli. Enjoy

Serve the potato omelette or tortilla with with aioli or salsa brava.

TIPS

It is important that the potatoes and onion are very cold before adding them to the egg, you can let the potatoes soak in the egg for 10 minutes or more, so that they take a softer and more delicious consistency.
