Preparation
Heat a skillet over medium heat with the oil over medium-low heat and add the garlic to aromatize it. Add the potatoes little by little and cook until they are soft. Add the onion and cook until it is clear, remove from the heat, strain well and cool.
In a bowl beat the eggs with salt and pepper, add the previous mixture and incorporate well.
Heat a pan over medium heat with the olive oil, add the previous mixture and cook over low heat until it is cooked, turn the potato omelette with the help of another pan or plate, and cook on the other side and until it takes a light golden color from both sides.
Remove from the skillet turning over with the help of a plate, serve with aioli. Enjoy
