Preparation
Chop the onion and garlic and fry in a pan with hot oil until the onion becomes transparent
Chop the cauliflower, potato and tomato and add to the onion and garlic and fry for 15 minutes or until the potato is soft and cooked. Reserve the vegetables separately.
Beat two eggs and add salt and pepper to taste. Put it in the hot pan with a little oil to form an egg omelet cooked on both sides. Repeat with two other eggs to make two egg tortillas.
On one of the tortillas, distribute the vegetables and on top place the second tortilla on top. Garnish with cream cheese to taste.
