  • 2 cups of sausage
  • 1/2 Cup of red onion finely chopped
  • 1 Cup of potato cooked and cut in cubes
  • 1 Cup of bacon for the sauce
  • 1 Cup of onion in quarters, for the sauce
  • 2 cloves of garlic for the sauce
  • 1 Cup of pinto beans cooked, for sauce
  • 5 pieces of Chile de árbol pepper dry, for the sauce
  • 1/4 of Cup of epazote for the sauce
  • 1 tablespoon of oregano for the sauce
  • 1/4 of teaspoonful of fat pepper for the sauce
  • 1 Cup of beans soup for the sauce
  • 1 Cup of whipping cream for the sauce
  • 1 pinch of Salt
  • enough of vegetable oil
  • 9 pieces of Corn tortillas
  • enough of sour cream at your service
  • enough of fresh cheese at your service
  • enough of red onion at your service
  • enough of fresh coriander at your service

    Preparation

    For the filling, heat a pan over medium heat and cook the chorizo ​​until it browns and release the fat, add the onion and cook a few minutes moving constantly. Integra the potato cook 3 minutes, season and reserve.
    Heat a frying pan over medium heat and cook the bacon until the fat is loose, add the onion, garlic, beans, the chile de árbol, the epazote, the oregano, the fat pepper and cook for 5 minutes. Add the bean broth and cook for 15 minutes, remove from heat and cool slightly. Blend with the cream to beat, season with salt and reserve.
    Fry the tortillas with hot oil until they soften, remove the excess fat with an absorbent paper towel. Fill them with the potato with chorizo, fold like enchiladas.
