If you do not know what to prepare for breakfast, do not despair anymore, make this recipe of enfrijoladas with a spicy touch.

Ingredients

4 portions
  • 12 tortillas
  • 1/2 cups pinto beans
  • 1/2 cups pickled jalapeño pepper
  • 1/2 cups oil
  • 1/4 cups manchego cheese, grated
  • 1/2 cups sour cream

Preparation

The beans are liquefied with the tin chilies and cooked with a little oil.
The tortillas are fried and bathed with the previous thing they are rolled placing little of the grated cheese and it is reserved a little to decorate.
They are mounted on a plate and the cheese is placed on them and they are put into the microwave for a few seconds to gratinate the cheese.
Finally they are served bathed with a little cream or to taste.

TIPS

It can be served as a main dish if we fill them with crumbled chicken breast.
