Ingredients

4 servings
  • 2 cups of chicken boiled and deshebrado
  • 2 cans of tomato in its juice (chopped or whole)
  • 1/2 tablespoon of black pepper
  • 2 spoonfuls of chipotle chile pepper
  • 1/2 serrano pepper chopped
  • 2 spoonfuls of vegetable oil
  • 2 spoonfuls of garlic
  • 2 onions chopped
  • 12 Corn tortillas
  • 3 cups of Manchego cheese
  • vegetable oils

    Preparation

    In a large skillet over medium heat, brown the onions, the chipotle pepper, the jalapeño and the garlic. Cook for 7 minutes.
    Add the tomatoes and cook for 3 minutes. Remove from heat and allow sauce to cool. In a food processor or blender make the sauce puree.
    In a large bowl, mix chicken with 1/2 cup of sauce.
    Pre-heat the oven to 200 degrees Celsius.
    6.In a large baking dish put the tortillas (you can put a little vegetable oil each to make them brown). Heat the tortillas for 2-3 minutes so they are soft and manageable.
    7.In the baking dish put 1/2 cup of the sauce. Take each tortilla and fill it with two tablespoons of chicken and roll it up.
    Arrange all the enchiladas in the baking dish with the opening facing down so they do not open. Top with remaining manchego sauce and cheese and bake for 10 minutes.

    TIPS

    You can also use flour tortillas.

    Debe ser chile jalapeño yo creo xq me salieron picosisimas demás...

    que tipo de chile es? en los ingredientes mencionan el chile serrano y en la preparación el chile jalapeño, podrian especificar el indicado, gracias

    enchiladas en una salsa distinta a la que yo acostumbro se ven muy ricas.. y por los ingredientes que lleva claro que deben de quedar muy sabrosas.. así que a preparar estas enchiladas en una variedad  distinta a la acostumbrada por esta salda diferente... gracias...!
