Preparation
Wash spinach, chop and sauté in a pan with olive oil for five minutes, until well cooked.
Place the eggs in a small deep pot with water. Put them to boil. Count ten minutes after the boil is released. Turn off the heat, let them cool and peel them.
Cut a slice of the egg at the bottom to form a flat surface where it can be stopped.
Cut the other end to make a lid. Remove the yolks with care. Place them in a bowl and crush them with a fork.
Add the three tablespoons of olive oil and the cooked spinach. Stir until a homogeneous mixture is obtained.
Add the pine nuts (save a few to decorate).
Season with salt and pepper. Mix well.
Fill the eggs with the spinach mixture.
Garnish with pine nuts and slices of red pepper. Serve them on the lettuce leaves.
