Preparation
In a medium bowl, mix the cottage cheese, cream and vanilla.
In a small bowl mix the baking soda, baking powder, flour, pinch of salt.
Add slowly to the cottage cheese mixture
With a balloon whisk beat egg whites and sugar until peaks form and is about to nougat.
With a spatula add the cheese mixture to the whites with enveloping movements.
Heat a pan and when it is very hot spray with the spray oil. Using the 1/4 cup measure add the mixture to the pan and spread so that it is in the shape of a hotcake.
Cook for 2-3 minutes until lightly browned, turn over and cook for another minute or two.
Serve hotcakes with blueberries and maple syrup.
